BIG JOE’S MAMA’S SAUERKRAUT BALLS

MIX
½ # Cooked Ham…ground
½ # Cooked Pork…ground
½ Can Corned Beef
1 ½ # Sauerkraut
(SET ASIDE)

SAUTE
2 T Butter
2 T Onion

ADD
½ c. Chopped Parsley
1 c. Milk
1 c. Flour

MAKE A DOUGH

ADD MEAT MIX

LET COOL UNTIL THE MIX SETS

MIX
Bread crumbs
Salt

FORM BALLS FROM ABOUT THE SIZE OF A GOLF BALL
(I use an ice cream scoop…spray the scoop with oil…it makes life a little easier)

WHIP UP A COUPLE OF EGGS…GIVE IT A SPLASH OF WATER…WHIP SOME MORE

BREAD BALLS AND DEEP FRY
A COUPLE OF THINGS
The longer you let the dough set up…the better off you are…try to keep the dough cool…warm dough can be a sloppy mess.
Warning! Let them cool off for a while before you try one…this will be hard…you’ll thank me later.
They freeze well.
