Zucchini Bread

Rachel: Scotty, I hear that you have a recipe for, quite possibly, the best zucchini bread in rock-n-roll.

Scotty: Well, Rachel, this one actually comes to us from my girl Kathy. She is the best! Hugs and kisses, baby! You know I love ya!

Jimmy: OK…OK……Stop trying to kiss up and cut in line, pal!! Scotty’s just jealous ‘cuz I get the FIRST zucchini bread when Kathy bakes ‘em! THIS IS THE BEST ZUCCHINI BREAD ON THE PLANET!

Scotty: It’s Your Condition!

ZUCCHINI BREAD (Jimmy Mac’s Fixation)

DRAIN
2 c. Shredded Zucchini

MIX
3 Eggs
1 3/4 c. Sugar
1 c. Vegetable Oil

IN SEPARATE BOWL MIX
2 c. Flour
2 t. Baking Soda
1/4 t. Baking Powder
2 t. Cinnamon
1 t. Salt
2 t. Vanilla

COMBINE BOWLS BY HAND

ADD
Zucchini

BAKE IN GREASED AND FLOURED BAKING PAN
350 F Until center is done…about an hour and 15 minutes…start checking with a toothpick after an hour.
